Ingredients
- 125 g Granola of your choice (speculaas is a great option!)
- 50 g Butter
- 70 g Dark Chocolate
- 100 ml Heavy Cream
- 200 g Cream Cheese
- 1 tbsp Sugar Substitute
- 1 tbsp Agave Syrup
- 1 tsp Vanilla Extract
- 1 tsp (2 g) Agar Agar
- Fresh Fruit for garnish
How it's made
1. Start by lining the bottom of your springform pan with parchment paper. For the crust, blend your granola in a food processor until it’s finely ground.
2. Melt the butter and stir in the granola until you have a smooth, sandy texture. Press this mixture firmly into the bottom of the pan with a spoon, then pop it into the fridge to set.
3. Next, heat the heavy cream, dark chocolate, and sugar substitute in a saucepan until the chocolate is completely melted and smooth.
4. Add the cream cheese and whisk until combined. Stir in the agave syrup and vanilla extract.
5. Finally, add the agar agar and whisk the mixture for a few minutes until it’s smooth and starts to thicken slightly. Once you see bubbles forming, keep whisking for another 1-2 minutes.
6. Pour the cheesecake filling onto the chilled crust and let it set in the fridge overnight.
