A little while ago, I challenged our Naturally Granola ambassadors to create a savoury recipe using our granola. And when Shana shared this one… omg yes.
We are big fans of Mexican-inspired food, so the fact that she went for a granola taco recipe? Absolutely brilliant.
These crispy chicken tacos are crunchy, fresh, creamy and full of flavour. The chicken is coated in a golden granola crumb, then layered into soft tacos with crunchy slaw, avocado and lime sour cream. It is the kind of recipe that feels fun, a little unexpected, and seriously delicious.

Ingredients

  • 4 to 6 small soft tacos
  • 100 g coleslaw mix
  • 1/2 apple
  • 1 tbsp mayonnaise
  • 1 avocado
  • 1 small pot sour cream
  • 1 lime
  • Flour, for coating
  • 1 egg, beaten
  • 100 g Signature Granola, finely crushed
  • 200 g chicken mini fillets
  • 1 spring onion
  • Salt, pepper and garlic powder

Method

  1. Add the ready-made coleslaw mix to a bowl. Remove the core from the half apple, dice it and add it to the slaw.
  2. Squeeze in the juice of half a lime. Add the mayonnaise, a little salt and pepper, and mix well.
  3. Mash the avocado and season with salt, pepper and garlic powder.
  4. In a separate bowl, mix the sour cream with the juice of the other half of the lime. Season with salt and pepper and stir well.
  5. Place some flour in one bowl, the beaten egg in a second bowl, and the finely crushed granola in a third bowl. Season the granola crumb with a little salt and pepper.
  6. Coat the chicken first in the flour, then in the egg, and finally in the granola crumb.
  7. Fry the chicken in a pan with butter until golden and crispy on both sides.
  8. Slice the chicken into strips.
  9. Fill the soft tacos with the slaw, mashed avocado and crispy chicken.
  10. Finish with lime sour cream and finely sliced spring onion. Serve straight away.
