Whipped Ricotta Toast with Granola Crunch

Whipped Ricotta, definitely a food trend of 2022. And one I secretly really like, too. So now for the end of the year, my go-to whipped ricotta.

Topped with peas, and of course Naturally Granola. Peas were the only thing Annemiek (the photographer) and I agreed on. Always a visual/taste discussion. But of course we both wanted our way. So herewith!

Ingredients

Whipped ricotta toast with crunch

Method

  1. Put the ricotta with salt in a food processor. Mix and slowly add the olive oil each time. 
  2. Do this for about 2 minutes until it is nice and fluffy. 
  3. Put the peas in boiling water until just tender.
  4. Mash your peas and add some salt and pepper to this if necessary.
  5. Spread your ricotta on the sourdough bread. Put the peas on top. 
  6. Top with Berry Wild Peanut Granola.
