How nice of you to come check out my recipe via the Naturally Granola website. My name is Charlotte and on Instagram I am active as @foodalalot. I love to share my passion for healthy and delicious food on IG. I get so much joy out of inspiring and being inspired. I can also call myself an NG ambassador recently, wow! NG is really my favourite, because what a delicious chunks without all those weird additives! That's exactly what fits in with my lifestyle. 
 
Every morning I stand in front of my kitchen counter looking at the jars of granola to see which ones I will add to my meals for the day. Meanwhile I'm eating those delicious chunks right out of the jar and my supply is flying by, haha! But back to 'meals for the day', because did you know you can add this granola to all your breakfasts, snacks, lunches and dinners? It gives you a nice bite and you can choose your own taste sensation. At the moment I have three real favorites: Signature, Belgian Dark Chocolate and Speculaas. YUM! Roses and Cardamom is my most surprising flavour, and if you add it to your yoghurt, smoothie bowls or pancakes, you'll think you're on a sunbed in the sun. We all want that, don't we! 
Below I share my savory recipe: vega satay with the crunchy bite of granola. Are you going to make it?

Vega satay

Yes! Here it is: my savory dish with granola! That I love tofu is no secret for my followers, but this one is one of our favorites right now! We ate it with a bowl of sweet potato and string beans and used the recipe from @beaufood - Oriental sweet potato wok noodles ❤️ Highly recommended!

Ingredients:

  • 500 Grams of Tofu
  • 4 El water
  • 2 tbsp sesame oil
  • 2 Tsp Turmeric
  • +/- 2 cm Ginger, peeled and grated
  • 1 tbsp lemon juice
  • 1 Tl Sambal (Oelek)
  • Large pinch of sea salt
  • Sate sauce (recipe below) 
  • Spring onion
  • Signature Naturally Granola

Method:

  1. Let the tofu lay out well, at least an hour beforehand. We ourselves always put the tofu in kitchen paper and weight it down with oven dishes. This way as much moisture as possible comes out. That is the most delicious!
  2. Cut the tofu into cubes.
  3. Make the marinade in a small bowl and stir everything well.
  4. Put the cubes in a container that you can close well later. Pour the marinade over them. Close the container completely and shake it! Shake until all the marinade is well spread. Leave to marinate for at least half an hour.
  5. Heat up a grill pan (in ours no oil needs to be added, but see how it works in yours), prick the cubes on a skewer and grill them.
  6. Meanwhile, make the sate sauce (see below).
  7. Serve the sticks on a plate, top with satay sauce, spring onion and granola for the crunchy bite! 😍

For the sate sauce

Ingredients:

  • 4 Large El peanut butter with pieces, 100% peanut butter from the AH
  • 125-200 Ml (vegetable) milk

Method:

  1. In a saucepan, heat the peanut butter with the milk. Stir until it becomes a smooth satay sauce. Check the desired thickness and adjust the amount of milk accordingly.
