VEGA "MINCED MEAT" BALLS

A special recipe, developed with NG in mind. Fabienne Dobbe from Models Love Food came up with this recipe for a delicious meatballs with pasta option for every vegetarian. 

Ingredients for the meatballs:

  • 400gr vegan mince
  • 1 cup Signature Granola
  • 1 vegan egg (I use Bob's red mill vegan egg replacement)
  • 2 tbsp water
  • 1 (red) onion
  • 3 garlic cloves
  • Salt / pepper

Ingredients for the sauce:

  • 800gr tomato sauce
  • 1 1/2 tablespoons tomato paste
  • 3 garlic cloves
  • 2 tablespoons capers
  • 2 Spoonfuls of green olives
  • Lots of sun-dried tomatoes
  • Hand of basil
  • 1/2 Teaspoon chili flakes
  • salt/pepper to taste

Method:

  1. Do the granola in a mincer until they're the size of breadcrumbs.
  2. Chop the onion and garlic finely.
  3. Make the vegan egg and let it rest for a few minutes.
  4. Meanwhile, mix all the other ingredients for the "meatballs" in a bowl, add the egg and knead everything together.
  5. Roll dots of this, I made sixteen.
  6. Heat some oil in the pan and fry the meatballs in it.
  7. Add some hot water and put the lid of the pan on top.
  8. Keep an eye on them and twist them to get a nice tan. 
  9. Heat another pan with some olive oil, chop the garlic into pieces and fry them a little, then add the rest of the ingredients and cook them until they thicken. Now cook your pasta as a side dish.

  10. When the meatballs are cooked, the pasta is al dente and the marinara sauce is as thick as you like, turn off the fire and you can scoop it up!

  11. I like to throw some extra olive oil over it, add some (vegan) parmesan cheese, pepper, salt and some extra basil, and voila.
