Vanilla cottage cheese glasses with rhubarb compote!

The last of the rhubarb can still be found until the season is over so at the last minute, here's a super quick and easy recipe!

Method

  1. Wash the rhubarb and chop into 2-3cm pieces.
  2. Put together with a very small amount of water in a saucepan over medium-high heat.
  3. Cook the rhubarb for about 10-15 minutes until it falls apart and you can mash it completely.
  4. Then mix a dash of agave syrup and 1 teaspoon of vanilla extract with the rhubarb and spoon into a clean weck jar to cool completely.
  5. Mix the cottage cheese with the other teaspoon of vanilla extract and the tablespoon of stevia syrup.
  6. Fill the glasses with the cottage cheese, rhubarb compote and top with the delicious granola!
  7. The flavor I used here contains wild peanuts, freeze-dried cranberries and ginger, delicious combo! 🙌🏼.
