Vanilla cottage cheese glasses with rhubarb compote!
The last of the rhubarb can still be found until the season is over so at the last minute, here's a super quick and easy recipe!

Ingredients
- 350 gr Quark
- 2 Stems of Rhubarb
- 1 tbsp Stevia Syrup
- 1 tbsp Agave Syrup
- 2 tsp Vanilla extract
- Berry Wild Peanuts granola


Method
- Wash the rhubarb and chop into 2-3cm pieces.
- Put together with a very small amount of water in a saucepan over medium-high heat.
- Cook the rhubarb for about 10-15 minutes until it falls apart and you can mash it completely.
- Then mix a dash of agave syrup and 1 teaspoon of vanilla extract with the rhubarb and spoon into a clean weck jar to cool completely.
- Mix the cottage cheese with the other teaspoon of vanilla extract and the tablespoon of stevia syrup.
- Fill the glasses with the cottage cheese, rhubarb compote and top with the delicious granola!
- The flavor I used here contains wild peanuts, freeze-dried cranberries and ginger, delicious combo! 🙌🏼.
