Looking for a healthy pancake recipe? This is my go-to. They are nice and fluffy, super flavorful AND you can put brown bananas in them.
So nice no-waste too! I love it.
2 Cups oatmeal
1/2 teaspoon salt
2 Teaspoons of baking powder
1/2 Teaspoon baking soda
3/4 Cup milk
1 Banana (nice and brown)
1/4 Cup honey
1 Teaspoon pure vanilla extract
In a medium bowl, mix oats, sea salt, cinnamon, baking powder and baking soda. Set aside.
Place milk, banana and honey in the container of a blender and blend until smooth.
Add the dry mixture and mix until smooth.
Add egg and vanilla and mix 15 seconds, or until batter is smooth.
Melt 1 tablespoon of butter or coconut oil on your hot pan.
Using a large spoon, put 2 tablespoons of the batter on the preheated pan.
Bake the first side until the edges look firm and bubbles form in the batter (about 2 minutes).
Turn over and bake the second side for another 2 to 4 minutes or until lightly golden brown. Repeat until all the batter has been used.
Serve warm with maple syrup and fresh berries!
