Red Velvet Cheesecake Brownies

  1. Preheat the oven to 180°C. Grease a 20×20 cm square baking pan with 1 tablespoon of butter and line it with baking paper.
  2. Pour the melted butter into a mixing bowl. Stir in the sugar, vanilla extract, cocoa powder, salt, food coloring and vinegar. Beat in the 2 eggs and add the flour until everything is incorporated.
  3.  Pour most of the mix into the baking pan, saving a quarter to stir on top, next to the cheesecake mixture.
  4. Beat the cream cheese, egg yolk, vanilla extract and sugar until smooth. Spoon spoonfuls of the cream cheese mix onto the brownie batter and spoon the rest of the brownie mix in between. Put your granola chunks in here. Use a spoon to stir the two together.
  5. Bake for 30 minutes and let cool in the baking pan. Place in the refrigerator for at least 1 hour before cutting and serving. For 25 small squares.
