Healthy Latte Pudding

A long time ago, we at Naturally Granola did a collaboration with an "up and coming" recipe developer. Saudalicious created a whole bunch of delicious recipes for us, including this delicious healthy latte pudding with granola. So big fan of her recipes that we still love to share them with you! If you can't decide between a coffee/latte or dessert after dinner, this is an ideal solution. It's actually a nice sweet but healthy edible latte! So what are you waiting for?

Method

Froth up 100 ml cashew milk with the stevia drops in the frother. Meanwhile, make your espresso and pour it, together with the 80 ml cashew milk, honey and the agar agar in a saucepan. Heat it slowly until it's softly boiling and keep stirring with a whisk while letting it boil for 2 minutes. Now turn off the hob and stir a little more.

Take your best glass and pour the frothed milk into it. Pour in the contents of the saucepan and stir with a whisk, but make sure the froth stays on top.

Put your "cashew latte" glass in the fridge for at least 60 minutes so it can set. Sprinkle the granola on top and finish with some extra honey.
