HEALTHY BANANA BREAD
I (Tiara) am a huge fan of banana bread myself and there are a few reasons why. First of all, I always choose a healthy recipe, so I don't feel like I'm eating something that isn't really healthy, only without the guilt (when I eat 3 slices). Apart from that, this is a very no waste recipe, because the ugliest brownest (tastiest) bananas go into this. And as icing on the cake, I prefer to throw our granola into everything, and with banana bread it's really delicious! You can put our granola chunks in, but grits are great for some crunch too.
This banana bread granola recipe is perfect to make once a week, then you can take a piece to work every day!

- 1/3 cup Coconut oil, melted
- 1/2 cup Honey or Maple syrup
- 2 eggs
- 1 cup mashed banana (the browner the better!)
- 1/2 cup Milk (vegan options available too!)
- 1 teaspoon baking soda
- 1 teaspoon Vanilla extract
- 1/2 teaspoon Salt
- 1/2 teaspoon Cinnamon
- 1 3/4 cup Whole wheat flour
- 1/4 cup Signaute grits
- 1/4 cup Chocolate chips
Preheat the oven to 165 degrees Fahrenheit and grease a 9×5-inch loaf pan.
Put the oil and honey in a large bowl and mix with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk (if the coconut oil solidifies on contact with cold ingredients, let the bowl rest in a warm place, like on top of your stove, for a few minutes).
Add the baking soda, vanilla, salt and cinnamon and mix. Using a large spoon, stir in the flour until blended. Now add your Naturally Granola variant of choice, along with the chocolate chips.
Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon.
Bake for 55 to 60 minutes, or until a toothpick comes out clean. Let it cool in the bread pan for at least 10 minutes. Cut this into thick slices, add peanut butter or tahini on top with granola for extra crunch if desired.
