My grandmother was one of my favorite people in the world. And when I think of Speculoos, I think of her. I was born and raised in Curaçao, where I regularly went out with my grandmother as a child. We then drove past a bakery called "Bakkerij de Zon", and here she bought the tastiest speculaas cookies for me. Of those very large ones, and as a child, of course, they seem even larger!
As an ode to my grandmother, I developed our Speculaas granola. With the spices without the cookie, so also a lot healthier. Curious? This flavor is delicious with yogurt, a banana and blueberries.
