No-bake Chocolate Cheesecake

A delicious cheesecake that is super easy to make! The delicious granola speculoos base goes perfectly with the creamy cheesecake filling. Read below how to make it.

  1. Line the bottom of the springform pan with parchment paper. For the base, grind the granola in a food processor.
  2. Melt the butter and add the granola, mix well until a fine sand structure is formed.
  3. Pour the bottom into the springform pan and press down well evenly with a spoon. Refrigerate for an hour.
  4. Heat the whipped cream together with the dark chocolate and sugar (substitute) in a saucepan until the chocolate is completely melted.
  5. Then add the cream cheese and stir well with a whisk. Then add the agave syrup and vanilla extract and stir well again.
  6. Finally, add the agar agar to the cheesecake mixture, now mix well with a whisk for a few minutes until all the lumps are gone and the mixture begins to boil.
  7. If bubbles form, keep stirring well for another minute or 2. Now pour the cheesecake mixture on the bottom and refrigerate for the whole night.
  8. Garnish with fresh fruit the next day.
