Mocha Chia Pudding
If something makes me happy, it's an easy recipe. Don't get me wrong, I often stand in the kitchen for 2 hours (on a weekday 🤣) but if I can make something that is really delicious, and only takes me 5 minutes, then I do an extra dance.
One of the recipes that falls under the category, ready in 5 minutes, it is a chia pudding. Can you eat it after 5 minutes, no. But that's okay too. The advantage of chia pudding is not only that it is super quick to make, or that it is healthy. But also how many different variations there are. Any kind of milk, maybe even juice? Have you ever made a chia pudding with juice, I'm curious!
Those who know me, know that I am a big coffee and chocolate lover. So this chia pudding is definitely a favorite. Plus I always have the ingredients for this at home. Making it even easier.
Ingredients
- 1 tablespoon cocoa powder
- 1 tablespoon maple syrup
- 1/2 Teaspoon Vanilla Extract
- 1/2 cup vegetable milk
- 1/2 cup Espresso (chilled)
- 1/4 Cup Chia Seeds
Method
- Put all ingredients in a bowl and mix. If you want it do be done quicker, you can blend in an immersion blender.
- Divide into containers or jars.
- Refrigerate for at least 1 hour.
- Top it off with your favorite toppings, eg almond butter and granola.
