Corn Pudding

Denise was my best friend as a child. Meanwhile, Denise also has a business in food (in Miami, unfortunately). Her company is called Fela Sweets, Fela is her grandmother's name.

"Aunt Fela" is a wonderful woman, who can cook and bake incredibly well. Two of my favorite dishes I know because of her, Blintzes (pancakes with cottage cheese and cinnamon), and corn pudding.

And now years later, I'm making it myself. Corn is one of my favorite ingredients, so when we partnered with Gert de Mangeleer and I finally got to develop a corn granola I thought YES!

This recipe is of course topped with our Spicy Chocolate corn granola. I'm super curious what you think of it, so be sure to let me know by sending me an email.

  1. Preheat your oven to 200 degrees. And grease a baking dish.
  2. In a large bowl, beat eggs. Add sugar, milk and melted butter. Then add the cornstarch and beat until well mixed.
  3. Put the mixture in your baking dish.
  4. Bake for 45 minutes to an hour.
  5. Top with a little whipped ricotta and Spicy Chocolate Corn granola.
