Coffee Granola Cake

This month's granola of the month is our Giraffe's Coffee ☕. I then couldn't resist sharing this recipe with you. It's a recipe I haven't made in years, but it's DELIGHTFUL! And then with bits of coffee granola in it. Made based on the Coffee Cake recipe from Donna Hay

  1. Preheat the oven to 160°C (325°F). Line a 20cm x 30cm baking pan with non-stick baking paper.
  2. Place the brown sugar and cinnamon in a small bowl and mix. Set aside.
  3. Place the flour, sugar, eggs, milk, butter and vanilla in a large bowl and beat until smooth.
  4. Pour half of the mixture into the mold. Sprinkle with the coffee and half of the brown sugar mixture. Put the rest of the cake mixture on top and spread evenly. Sprinkle with the remaining brown sugar mixture. Pour the extra butter on top.
  5. Bake 50-55 minutes or until cake is done when tested with a skewer. Let cool in the mold for 5 minutes before slicing to serve.
