Healthy Reeses Peanut Butter Treat

I was born and raised on Curaçao, which means that I grew up with Dutch but also American products. when in the cereal aisle I definitely had a favorite, and that was Cini Mini, (now I find them too sweet) When it comes to chocolate bars I had a favorite too, Reese's Peanut Butter Cups.

Recently I was looking for delicious and interesting new recipes to make with our granola crumbs. So I found this Healthy Twix bar, though in my opinion, definitely more of a Healthy Reeses Peanut Butter Cups. This recipe is a healthy version, but they really are very good.

Ingredients - Shortbread Layer

Method

  1. Preheat your oven to 170 degrees C. 
  2. Mix all ingredients in a bowl. 
  3. Choose a small baking pan, either round or square, and line it with baking paper. After creating this recipe I thought it would be easiest to make them in granola bar molds, if you have a silicone mold for that!
  4. Put your mixture in it, spread and press. Bake for 10-12 minutes until nice golden brown.
  5. Let cool.

Ingredients - Peanut Butter Layer

Method

  1. Mix all ingredients in a small saucepan over low heat. Stir well and do not let it get too hot for 2-3 minutes.
  2. Let this cool completely.
  3. When your shortbread layer has cooled well, put your peanut butter mixture on it. 
  4. Put this in the freezer. About 30 minutes.
  5. Then make your chocolate layer.

Method

  1. Break your chocolate, and put this together with the coconut oil in a pan over a very low heat. Mix everything together.
  2. Put your chocolate layer on the peanut butter layer, and spread it by picking up your baking pan and spreading evenly. Put this in the freezer for 15 minutes and enjoy!
