Roasted Pumpkin Soup

Whenever I see a pumpkin, I think of this recipe by default. It's a recipe my mom has been making for years, but as roasted pumpkin. Delicious as a side dish! 

I make it that way, too. But then sometimes I make half of the pumpkin into a soup right away, too. Curious? Check it out!


Roasted pumpkin soup


  1. Cut the pumpkin into pieces (do not peel!).
  2. Put the squash in a baking dish. Put the olive oil on top of this. 
  3. Press the garlic into this.
  4. Add salt, pepper, provencal herbs and lavender.
  5. Put in the oven at 200 degrees, until nicely browned, and well soft. 
  6. Add your roasted pumpkin to the broth. Blend with a hand blender (or in a blender) until smooth. 
  7. Add a splash of milk or cream. 
  8. Top with granola and sage.
