This vegetarian breakfast is savory and O so good!

This is a vegetarian breakfast recipe that I myself recently found through Delicious. That morning I was really in the mood for something nice and warm and savory. And I succeeded well. This made me very happy, and so did Nikos! (He is even more critical than me).

So herewith, one of my new favo breakfasts that is delicious now even with this weather.

Method

  1. Heat the grill to medium. Heat 2 tbsp oil in a large ovenproof skillet over medium heat, add the garlic and thyme and fry 3-4 minutes until the garlic is soft but not brown.
  2. Add the chickpeas and harissa paste and cook for 2 minutes, then stir in the spinach, passata or chopped tomatoes and chili flakes and bring to a boil.
  3. Once the mixture begins to simmer, carefully add the eggs on top so that they lay neatly. Simmer for 2 minutes, then transfer the pan to the hot grill and cook for 2-3 minutes until the egg whites are cooked but the yolks are still runny.
  4. Remove the pan from the grill, drizzle the top with the remaining olive oil, sprinkle with the sumac and season with salt and pepper.
