Corn Pudding

Denise was my best friend as a kid. By now, Denise also has a business in food (in Miami, unfortunately). Her company is called Fela Sweets, Fela is her grandmother's name. 

"Aunt Fela" is a wonderful woman, who can cook and bake incredibly delicious food. Two of my favorite dishes I know through her, Blintzes (pancakes with cottage cheese and cinnamon), and corn pudding. 

And now years later, I make it myself. Corn is one of my favorite ingredients, so when we started the collaboration with Gert de Mangeleer and I finally got to develop a corn granola I thought got so excited! 

This recipe is of course topped with our Spicy chocolate corn granola. I'm super curious what you think of it, so let me know by sending me an email.

Method

  1. Preheat your oven to 200 degrees. And grease a baking dish.
  2. In a large bowl, beat your eggs. Add sugar, milk and melted butter. Then add the cornstarch and beat until well mixed.
  3. Put the mixture in your baking dish. 
  4. Bake for 45 minutes to an hour. 
  5. Top met een beetje geklopte ricotta en Spicy Chocolate Corn granola.
