Coconut Lemon Granola Balls

Method

  1. Add granola to a food processor and pulse until crumbs remain. Set aside.
  2. Add lemon curd and dates to a food processor and blend until smooth.
  3. Add the granola crumbs and grated coconut. Pulse until just combined (you don't want a paste).
  4. Make 12 balls of the same size and roll them in the coconut. Put in the fridge for at least 30 minutes.
