My name is Aniek Keijsers and I'm 29 years old. Since a few years I share on my blog recipes and photos.

Last year my first cookbook Ice cream & co came out, of which I am mega proud! Making ice cream is so much fun! And by the way also delicious in combination with granola.
In addition, I have already done a number of large photography assignments, including for Licor 43. Since 3 months I am also the proud mother of a daughter, so everything is on a lower level.

  • 200 gr. Red fruit of your choice
  • 200 ml full cream coconut milk
  • 2 tablespoons + 50 gr. Sugar
  • 1/2 teaspoon Vanilla
  • Naturally Granola chunks, choice of variant


  1. Place red fruit and sugar in a small saucepan. Heat on low heat until the fruit releases water. 
  2. Let this cool.
  3. Mix coconut milk, sugar and vanilla on high speed about 2 minutes.
  4. Fill your ice cream molds with the three different "ingredients". Coconut mixture, fruit and granola, alternate. 
  5. Put this in the freezer for at least 6 hours. 
  6. Voila! Time for a summer breakfast!
