Klop de eieren met de suiker tot een licht en schuimig mengsel.
Zeef de bloem, het bakpoeder en zout boven de kom en spatel er voorzichtig doorheen.
Voeg de melk toe en spatel dit er ook doorheen.
Schep hoopjes beslag op een bakplaat met bakpapier en bak 10-12 minuten op 200 graden.

Doe het blik kokosmelk minimaal 1 nacht in de koelkast.
Schep de kokosmelk in een kom. Doe hier poedersuiker en vanille bij en klop dit op tot het stijf is.
Doe dit lekker bovenop je eierkoek, en voeg hier je lievelings Naturally Granola en wat fruit aan toe.
